You can paste text as quote when using CTRL+V - is this the formatting you are looking for or a different option?

Ideally, I want to be able to create a quote from scratch without copying and pasting from elsewhere.
I.e., select text and format as quote. Or start a quote and type.
Thanks for the workaround in the meantime, though.
@olivia_rust On MacOS there seems to be a bug with this feature. When pasting a text I see a small popup for a tenth off a second (probably the paste as quote option), but then it disappears.
In my case I have no option to format text as Quote in any way.
